Dessert in the summer can be the most simple thing in the world. When it’s hot outside, nothing is as refreshing and as EASY as ice cream. Whenever you are entertaining or having people over, there is no need to stress over making something homemade for dessert. If you get a few cartons of ice cream in assorted flavors, a scoop, and some mini sugar cones…Trust me, people will be happy. Set out a bowl of chocolate sauce, sprinkles, chocolate chips and you are done. Mini ice cream cones are really cute and it brings out the kid in everyone!

Another option…ice cream sandwiches. This takes a tiny bit more effort, but I can’t think of a better summer dessert. Leave out cookies and ice cream and have everyone make their own, or prepare them ahead of time and stick them in the freezer. Any kind of cookies will do – last week, we made them with oatmeal cookies and vanilla ice cream – AMAZING.
